Kalk = chalk. Spitz = acid. With pet nat or ancestral method wines, secondary fermentation happens in the bottle and lees are not disgorged (it is unfiltered). As this wine is so natural and “alive”, bottle variation and cloudiness can be expected. Crushed shells, minerality erupting with freshness can be found along with herbal and floral notes.
Producer Christoph Hoch trained with famous Champagne producers and uses chalky soil which is prized in Champagne.
