A lighter, fresher style of Madeira. Notes of marzipan, date, and fig along with crème caramel, walnut, five spice with a core of lemon zest and a sprinkle of sea salt to punctuate perfectly. It has the acidity and salinity to work as an aperitif or a dessert wine. Originally an accident of wines getting hot and “cooking” during travel—as the story goes, a barrel was left uncorked on a desert island and was “freshened” by a night’s rainstorm—the nutty quality became a desired outcome.
